So when I told Pete we had received a challenge from the Miami Fire department, of course his sense of adventure exuberated with a question:
* "What are we making?"
* "Ox Tail"
* "I'm not making Ox Tail"
* "You don't have a choice"
* "Can't we make a Nice veal with bla bla bla . . . "
Pete loves the idea of the challenge, the intrigue of trying to nail a dish we've never heard of before, until we are challenged to make a dish we've never heard of before. That's when the word comes out and he retreats to his old familiar Italian dishes, a nice this, a nice that. But we suck it up, and when we have a chance to get comfortable in the challengers kitchen (and as you can see we had no trouble getting comfortable here) it all comes together.
I didn't hear the word once while making the Ox Tail, just a lot of ASS jokes. But it came out later when he tasted the Sorrel and the Italian bread!

I know my partner can't wait for the show-down in Providence, RI where our challenger, Danny has already described it as an Italian Food Fest.
